Last night, my friend Jay posted about his dinner on Facebook. It sounded quite good to me, so I asked him for the recipe. He quickly gave me the directions. I then asked for a picture and told him that I would share the recipe and picture with all of you if he would share with me. Within moments I had everything ready to share with you. Since he didn’t tell me the name of it, I decided to name it after him, it’s Jay’s Mexican Cornbread Casserole.
Serves 6 to 8 strangers or 4 rednecks. It’s Heaven!!
- Martha White Cornbread Mix
- Egg
- Milk (Check package for amount)
- One Can of Creamed Corn
- Grated Cheddar Cheese
- One Pound Ground Beef
- Taco Seasoning Mix
- Butter (to grease cooking dish)
- Brown ground beef and season with taco seasoning.
- Preheat oven to 375* or 400*.
- Make cornbread according to package directions.
- Add can of creamed corn. Mix well.
- Heat glass dish and melt butter, remove when hot and butter has melted.
- Pour half of the corn bread mix in the dish.
- Cover with ground beef.
- Top with shredded mild cheddar.
- Cover with the remaining half of cornbread.
- Bake 45-60 minutes at 375* - 400* or until golden brown.
